The Institute for Food Safety and Health (IFSH) is a collaborative research consortium dedicated to improving food safety for U.S. consumers, uniting the expertise of the U.S. Food and Drug Administration (FDA), Illinois Institute of Technology (IIT), and the food industry. It was established in 1988 as the National Center for Food Safety and Technology (NCFST), following a substantial donation from Corn Products International to IIT, and is situated at the Moffett Campus in Bedford Park, Illinois. The main building is notable for its bas relief murals created by renowned architectural sculptor Lee Lawrie, which vividly portray the history of corn and food production. In 2011, NCFST was rebranded as IFSH, expanding its scope to include new centers and partnering with over 50 food industry companies. Today, IFSH leverages state-of-the-art research facilities and offers certifications, master's, and doctorate degrees, playing a comprehensive role in advancing food science and technology.
